Ken’s Cast Iron Kitchen

Ken’s Cast Iron Kitchen: North of the Border Mexican Soup (low carb)

Craving Mexican but your resources are limited? Try this hearty and healthy Mexican Soup. Why North of the Border? Cause this is Alaska and we’re north of most ALL the borders!

Ingredients:

1 pound ground meat (whatcha got?) browned

2 green onions chopped

1 can of mild Rotel tomatoes with chilies

4 oz of cream cheese

1 and 1/2 cups of chicken broth

1 tsp garlic powder, cumin, taco seasoning or what floats your boat

Instructions:

  1. Pull out an enamelized Dutch Oven

  2. Brown ground meat with the onions.

  3. Add cream cheese and stir till melted.

  4. Then add Rotel tomatoes and chicken broth along with spices.

  5. Cook on medium low for about 30 minutes to an hour.
